Garlic Aioli recipe
It’s so easy! First you’ll want to get that garlic pressed down into a paste. Here’s how:
Peel the garlic cloves and then mince finely.
Sprinkle the sea salt over the garlic and then using the side and edge of your knife blade, crush the garlic. Alternate mincing the garlic and crushing it back and forth with the edge of your knife.
Eventually you will get a smooth garlic paste!
Add the garlic paste to a bowl with the mayonnaise. Squeeze the juice from the lemon and add 1 1/2 tbsp lemon juice to the bowl. Mix well, cover, and refrigerate for at least an hour before serving, to allow the flavour to develop.
Expert Tips
- Turning the garlic into a paste is what gives the aioli its delicious flavour and smooth texture.
- Save yourself some time by pushing the garlic through a garlic press first before crushing it with your knife.
- This garlic aioli will last about a week if kept in an air tight container in the fridge.
