I’m always dreaming up new ways to eat low carb and not get bored. Don’t get me wrong, I love chicken and could easily eat it every day, but I really love to create new things and would get bored if I ate the same thing every day from a creative aspect.
Oven baked chicken thighs are wonderful. They are very simple to debone, which opens them up to a world of possibilities! I find they have much more flavour than chicken breasts and I love their size.
Prosciutto is another magical ingredient. I much prefer this to bacon when used for wrapping foods and baking. Don’t get me wrong, bacon is my favourite food group! I literally eat it every single day. But sometimes it just doesn’t work that well. If you were to wrap chicken thighs and bake it, the bacon would be way under cooked and yucky. Prosciutto is magical because it’s got that beautiful saltiness I love so dearly, a lovely smokey flavour and it bakes beautifully!
Then there’s pesto. Who doesn’t love basil, garlic and olive oil all mashed together? Combine all three killer ingredients and you’ve got yourself some epic oven baked chicken thighs.
How to make prosciutto wrapped chicken thighs
This oven baked chicken thighs recipe is super easy!! Spread pesto over each chicken thigh, thickly coating the entire inside. Roll up each thigh and then wrap each up with a slice of prosciutto!
Place each thigh in a baking dish and bake at 375° for 30 minutes or until the internal temperature is 180°.
What to serve with chicken thighs?
I usually go for a nice healthy salad to add to this Prosciutto Wrapped Chicken Thigh dish. My favourite is Kale Caesar Salad with Creamy Caesar Dressing!
Another great option is to make some Roasted Broccolini, Green Beans and Carrots or garlic buttered steamed veggies.
For those non low carbers this dish would pair great with rice, pasta or even some lemon potatoes.

How to debone chicken thighs
Buy chicken thighs bone in and skin on for a better price! It it super easy to de skin and debone chicken thighs. With some practice you can cut up a family pack of chicken thighs in minutes while keeping the whole thigh connected. Having said that, you find a great deal on deboned and de skinned chicken thighs? Start by removing the skin from the thigh. It pulls away very easily, and you will only need to make one cut to remove it completely. Flip the thigh over so you have easy access to the bone. Cut along both side of the bone until the bone is fully exposed. Cut underneath to remove the bone and voila! You’ve got yourself a boneless chicken thigh!
Buying prosciutto
When buying prosciutto from the store, I always buy it from the deli counter. I make sure they know to toss the first slice and then layer the prosciutto properly so it doesn’t get folded or crumpled; this would be a nightmare to work with.

Prosciutto Wrapped Chicken Thighs with Pesto
Ingredients
- 6 chicken thighs de boned and de skinned
- 3 tbsp pesto
- 6 thin slices prosciutto
Instructions

- Baking Dish
Directions
- Heat oven to 375°.
- Lay the chicken thighs out, skin side down. Spread 1.5 tsp pesto over the entire inside of each chicken thigh. Roll them up and wrap one piece of prosciutto around each thigh.
- Bake for 30 minutes or until internal temperature is 180°. Serve hot and enjoy!
