This Kale Caesar Salad is just so so yummy you’ll never have a regular Caesar salad ever again. Not even kidding. The crisp kale blends perfectly with the romaine, the flavour of the toasted almonds play beautifully with the sweetness of the cranberries, and the crunchy croutons and salty parmesan elevate this Kale Caesar Salad to complete deliciousness.
Besides it’s incredible flavour and texture, this Kale Caesar Salad is a healthier option than your typical caesar salad. Kale is high in fibre, protein and folate. It is also loaded with all sorts of vitamins and antioxidants such as Vitamins A, C and K, omega-3, calcium, zinc and potassium. Amazing right??
So basically it makes sense to eat this salad every day for lunch, dinner… dessert? Right? At least that’s what I tell myself!
What goes into a Caesar salad?
Caesar salad ingredients can vary, however, generally they all have romaine lettuce, parmesan cheese and GARLIC! In this deliciously healthy Kale Caesar Salad there is romaine, kale, parmesan cheese, dried cranberries, croutons and toasted almonds. My favourite dressing is a Creamy Caesar but a vinaigrette is also an excellent choice.
How do you prepare kale for a salad?
Kale is very quick and easy to prepare! One important note: please do not skip out on washing your kale before use! I have found numerous different types of bugs inside the folds! Just the other day I found a fully cocooned caterpillar on it’s journey to become a butterfly! Luckily I caught it before I submerged the kale in water and was able to put it outside somewhere safe.
After you’ve washed and dried your kale, you’ll want to de-rib it because the centre of kale is not nice to eat. With your left hand hold the centre rib while the kale is folded in half. With your right hand you can easily rip the leaves from the stock! Of course you could use a knife too but I find this way super fast and easy.
For Kale Caesar Salad I like to chop up the kale very thin so it helps to cut down on the slightly bitter flavour. After washing and chopping it’s ready to toss with the other ingredients!

Kale Caesar Salad
- 1 head green kale
- 1 head romaine
- cup shredded parmesan cheese
- slivered almonds toasted
- 1 full recipe Creamy Caesar Dressing
- Make 1 full recipe of my delicious Creamy Caesar Dressing.
- Derib the kale and chop up thin. Chop the romaine thin and toss in a large salad bowl with the kale and romaine. Pour in the dressing, croutons and dried cranberries, toss well to fully coat the greens. Top off with toasted almonds and dive in head first!
