Lunch really doesn’t get much better than this RIDICULOUSLY DELISH Low Carb Chicken Sandwich with Prosciutto, Bocconcini and Basil.

I am kinda obsessed with the prosciutto-basil-bocconcini-balsamic combination. I recently made a pizza on homemade focaccia with these goodies loaded on top and since then, have not been able to get the flavour from my mind. So. Dang. Delicious.

Today I bring you a low carb, gluten free, absolutely delicious variation of that yummy pizza. Let me know what you think!

What you will need to make this Low Carb Chicken Sandwich

To nail this epic Low Carb Chicken Sandwich you will need to start with a yummy bread. Look below for more on the bread!

You will also need chicken breast, fresh basil, prosciutto, medallion bocconcini and a balsamic reduction.

How to make a Low Carb Chicken Sandwich with Prosciutto, Bocconcini and Basil

Prep the goods

Start by making the focaccia flatbread you choose and the balsamic reduction. *see post below for details on both

While it’s in the oven, heat a skillet and a tbsp of oil on medium low heat and slice the chicken breast in half horizontally so that you end up with two chicken cutlets. Season each side of both cutlets with salt and pepper then sear in the hot oil until the chicken is cooked through. Insert an internal thermometer to make sure it has reached 165°.

Set the chicken aside to cool and quickly sauté the prosciutto until it is slightly crispy. This should only take a couple of minutes. Dab the excess grease with paper towel and set aside to cool.

Build the sandwich

Cut the focaccia flatbread into four. You can either trim the edges to create four rectangles, or leave the edges for a more rustic look.

Divide the basil leaves in between two slices of the flatbread. Slice both cutlets in half horizontally again so that they have better coverage. Divide the chicken between the two slices of flatbread with basil. Next add two slices of prosciutto to the top of the chicken and then divide the bocconcini between the two.

Drizzle with the balsamic reduction and if you like, grill until the cheese in melty.

All about the Bread

I love bread. I really, truly do. Can’t do life without the stuff, so am constantly creating healthier ways to eat it. I have listed the breads I have created that would pair great with this sandwich, or you can use whatever your own favourites are!

At this point I have created two types of focaccia flatbread, a 90 second keto bread for those need-a-sandwich-right-now kinda days, and also a low carb biscuit recipe.

Focaccia Flatbread

This bread is my favourite for sandwiches. I love how thin it can be and all of the different flavour options there are. For this particular Low Carb Chicken Sandwich I recommend this Tomato Basil Focaccia Flatbread recipe, but would also be delicious if you prefer a more cheesier one like my Cheesy Focaccia Flatbread.

If you are in a hurry this bread can be ready in under 5 minutes. Pretty awesome hey? I have made this recipe more times than I can count and absolutely love it.

Balsamic Reduction

YUM!! I love balsamic vinegar. It brings a delicious flavour to such a wide variety of dishes. It’s only flaw is it’s high carb content. Per 1 tbsp, there are 2g of carbs. Balsamic vinegar is made from sweet white grape pressings that have been boiled down into a dark syrup and then aged in wood kegs for at least 12 years.

What is a balsamic reduction? Drool worthy. And so easy! Pour some balsamic vinegar in a small saucepan and bring to a low simmer. Cook this way until the vinegar has reduced, about 10 minutes.

You can find balsamic reductions at the store; just be cautious about the ingredients used. Lots of reductions and glazes can have added sugars and thickeners.

Tips and Tricks

Here are some tips and tricks for making this sandwich run a little bit smoother.

  • I always get my prosciutto sliced fresh from the deli counter. Make sure they start with a fresh slice and lay each piece down evenly on the paper. Ask them to place paper in-between each layer of meat because prosciutto is sticky and can ball up easily.
  • I like to use medallion bocconcini because I find it easier to eat the sandwich with the larger slices. If you can’t any, the regular bocconcini will work fine, just slice them in half.
  • Buy your basil fresh! Unless you have a basil plant, I find basil doesn’t last very long. This is why I make sure to buy my basil no more than two days before I plan on using it.
