The best way to use up leftover turkey!

Yummmmm I LOVE turkey dinners! There isn’t a lot better than a giant plate of juicy turkey smothered in gravy and paired with green beans and Low Carb Biscuits!
Another reason I love turkey dinners? All the meals that can be made with the leftover turkey meat! I usually have a variety of dishes I plan to make ahead of time. When I’m cleaning up from dinner, I pack the leftover meat into portioned out packs, wrap them in tin foil and mark them with a marker. Then I freeze them all together in a freezer safe ziploc and pull them out as I need them.
Today I bring you one of my favourite dishes.. Low Carb Turkey a la King! This flavourful dish is super easy to whip up for a quick weeknight meal. I like to serve mine with Cauliflower Rice, Low Carb Biscuits or a 90 Second Keto Bread. For my family I usually make a side of rice.

Ingredients
- butter
- mushrooms
- onion
- green pepper
- celery

- cooked turkey
- heavy cream
- chicken stock
- sea salt
- ground black pepper

How to make Turkey a la King
Start by washing the veggies, including the mushrooms. Chop the onion, celery, green pepper and mushrooms. Melt butter in a saucepan and once hot, add the onion, celery, green pepper and mushrooms. Mix in the pepper and salt and cook until the onion is translucent and the mushrooms have browned.
Chop the turkey, mince the garlic, trim the green beans and cut them into 1″ pieces. Mix all three into the mushrooms and stir, then pour in the warmed cream, and chicken stock. Bring to a simmer and reduce for 10 minutes.
If you would like a thick sauce, xanthan gum can be used to thicken. Serve hot over Cauliflower Rice, Low Carb Biscuits or 90 Second Keto Bread.
Expert Tips & Tricks For Turkey a la King Recipe
- Mushrooms can carry a lot of dirt, so it is important to wash them thoroughly before chopping them into pieces.
- Chop the mushrooms into fairly small pieces – this will allow them to brown faster and better.
- Replace the chicken stock with bone stock for an even healthier dish.

Easy Turkey a la King Recipe (How To Make Turkey a la King)
Ingredients
Low Carb Turkey a la King
- ¼ cup butter
- 3 stalks celery
- 1 small onion
- 1 green pepper
- ½ lb mushrooms
- ½ tsp ground black pepper
- ½ tsp sea salt
- 3 cloves garlic
- ½ lb green beans
- ¾ lb leftover turkey
- 1 cup chicken stock
- ¾ cup heavy cream warmed
Optional
- 1/4 tsp xanthan gum
