As much as I LOVE my go-to Keto Italian Dressing for every salad you could imagine, marinating my meats, dunkin’ veggies or sneaking tastes with the tip of my finger, I find it necessary to switch up the vinaigrette scene, every now and again.

What better way to do so than with this flavour packed 5 Minute Keto Cilantro Lime Dressing? There isn’t a taco salad in existence that wouldn’t be tastier if only it was accompanied by this perfect concoction of simple ingredients.

How to make Keto Cilantro Lime Dressing

This dressing is crazy fast and super easy to make. I LOVE this stuff!

Juice the limes and pour the produced juice into the cup of an immersion blender. Mince a clove of garlic ( or use a garlic press ) and add to the cup along with the powdered sweetener, white wine vinegar, sea salt and black pepper.

Blend with the immersion blender until smooth, about 8-10 seconds. With one hand continue to blend the dressing and, with the other hand, slowly pour in the olive oil.

Mince the cilantro until you have 1/4 cup packed, then add it to the dressing. Blend with the immersion blender for just a moment or two. I recommend refrigerating the dressing for an hour or two to allow the flavours to build.

Store in an airtight container in the refrigerator for up to 5 days.

Expert Tips

  1. Immersion Blender Magic – An immersion blender with cup will make your job sooo much easier. I find this kitchen tool essential when it comes to making salad dressings, never mind it’s many other uses like pureeing soups and sauces. If you don’t have one, the dressing can be made with a bowl and whisk. Just make sure you whip it really well as the olive oil is being poured slowly into the dressing – you could potentially have some major separation otherwise.
  2. Lime Juicer – this little tool came to be on Christmas morning from a very special man – Old St. Nick. Don’t let this ‘little tool’ fool you – it’s been one of my favourites! It’s great for skipping the lime/lemon juice sting, cleans easy and the best part? The juice pours into a little cup that has measurements RIGHT ON IT! You can squeeze exactly how much lime/lemon juice you need for specific recipes!
  3. Powdered sweetener – If you are like me and enjoy saving bucks where you can, you’ll love this – buy granular sweetener like this one from So Nourished. Grab a clean coffee grinder, add 1/4 cup granular sweetener and grind for a minute or two.. voila! Powdered sweetener! I like to make a big batch and store it in an air tight container in my cupboard.
  4. Refrigerate – Like most dressings, the flavour of this Keto Cilantro Lime Dressing builds once it sits in the refrigerator. If you have the time to wait, I suggest you take it!

Chicken Taco Salad with Keto Cilantro Lime Dressing

This is my current favourite salad! Loaded with flavour and delicious veggies, this is a recipe for the books.

Take a boneless skinless chicken breast and slice it in half, horizontally, then coat it with taco seasoning – try this Homemade Low Carb Taco Seasoning. Fry in a hot skillet until the internal temperature of the chicken reaches 180°, then set aside to cool.

Fill a bowl with chopped lettuce, add sliced red pepper, chopped tomato and sliced avocado. Chop the cooled chicken and place half on top of the veggies. Top with cheese crisps and green onion, then drench that beauty in your Keto Cilantro Lime Dressing!

    Total win in 5 minutes! Woot woot! Love that it can bring so much tang to things like taco salads – instead of the typical creamy ranch flavor profile. But also … I had to comment on a couple of the things in your “Expert Tips” section. First: Immersion Blender Magic! OMG Yes! I adore mine so, so much! And also – that wonderful little citrus juicer. I have a wooden reamer I’ve loved for years, but I think I just might have to buy myself one with the handy little measure cup attached – that’s awesome!
