Jump to RecipeOh I just looooove Oreo cheesecake! Itβs got to be my favourite type of cheesecake! That or Quadruple Chocolate… Blueberry Lemon Swirlβ¦ or Triple Chocolate with Caramel and Peanutsβ¦. so hard to decide!
I made this beauty for my husbands birthday. I had been super craving oreo cookies so decided to make him this No Bake Oreo Cheesecake, because of course, it’s all about me. He loves to pair this cheesecake with frozen yogurt; it tastes like an epic ice cream cake!
No bake cheesecakes are very easy to create and excellent in the summer months when you don’t want to turn on the oven! They still require a decent amount of time to set properly, however they don’t need anywhere near the time it takes for a regular baked cheesecake. So if you’ve only got a few hours and are dying for cheesecake, give this No Bake Oreo Cheesecake a try!
How to make no bake Oreo cheesecake
Spray a 10″ springform pan with oil and set aside. Melt butter in a medium glass bowl and set aside. Using a food processor, crush 25 Oreos into fine crumbs. Dump the oreo crumbs into the butter, mix well and press into the bottom of the springform pan to form the crust. Place the crust into the freezer while the next layer is made.
Pulse 15 Oreos in the processor until they are small chunks and set aside; these will be for the oreo cheesecake layer.
Using a stand mixer with the whisk attachment, whip heavy cream until soft peaks form. Sift in icing sugar and vanilla, then whip into firm peaks. Scrape the whipped cream into a medium mixing bowl and set aside. Using the paddle attachment, whip cream cheese in the stand mixer until all the lumps are gone. Add sour cream and mix well. Stir in the whipped cream until fully incorporated. Fold in the 15 crushed Oreos and then pour the cheesecake into the springform pan. With a spatula, try to make the top of the cheesecake as level and smooth as possible. Set in the fridge for at least 2 hours.
To make the ganache, melt chocolate chips and heavy cream together in a microwave safe bowl on low temperature until the chocolate has melted. Stir well and let cool for half an hour before pouring over the cheesecake. Set at least 1 more hour.
This No Bake Oreo Cheesecake can be left as is, topped with crushed Oreos or if you want an extra pretty look can be garnished with fresh whipped cream and whole Oreos like I have pictured here. Either way, this cheesecake will leave you wanting more, more, more!
How many Oreos are in one package?
In the 500g package there should be around 50 oreo cookies. In this recipe that leaves 25 for the base, 15 for the cheesecake and 10 cookies to decorate the top with! Make sure you buy the original cookies, not the double stuffed, otherwise the numbers will be off.
Can you freeze cheesecake?
You sure can! I’ve got a slice of No Bake Oreo Raspberry White Chocolate Cheesecake sitting in my freezer right now for when my husband comes home from camp!
