My favourite thing to do after a long day in the sun? Grab a rotisserie chicken from the grocery store on the way home to my hot house. Nope, I don’t feel like turning on the oven to bake something, besides, it’s generally pretty late by the time I drag my brats lovely children from the sandy shore.

Paired with a quick Kale Caesar Salad, rotisserie chicken saves the day for a super quick and delicious dinner. The best part? Leftovers.

I like to save half of the whole chicken, squirrel it away from Nick’s hungry hands, to use for lunches the next day. Yeah, I’m one of those annoying people who is always trying to save a buck here and there. This Low Carb Curry Chicken Salad is such a great way to use up that leftover chicken. I hope you love it as much as we do!

  • Greek yogurt – This can easily be replaced with sour cream.
  • Cilantro – Not everyone likes this tasty herb. It can be replaced with fresh parsley, or can simply be omitted.
  • Pecans – Don’t have any? Try cashews or almonds.
  • Onion – I prefer green onion in my salad, but it can be replaced with either red, white or shallots.
