Is chicken salad keto? This one is! and not only that, it’s a unique take on the classic recipe that will have everyone asking what you did differently.

A Keto Chicken Salad is an American classic that has been around since the early 1900s. It was originally made with leftover roast chicken, but now there are many different versions available.

My favorite thing to do after a long day in the sun? Grab a rotisserie chicken from the grocery store on the way home to my hot house. Nope, I don’t feel like turning on the oven to bake something, besides, it’s generally pretty late by the time I drag my brats lovely children from the sandy shore.

Paired with a quick Kale Caesar Salad, rotisserie chicken saves the day for a super quick and delicious dinner. The best part? Leftovers.

I like to save half of the whole chicken, squirrel it away from Nick’s hungry hands, to use for lunches the next day. Yeah, I’m one of those annoying people who is always trying to save a buck here and there. This Low Carb Curry Chicken Salad is such a great way to use up that leftover chicken. I hope you love it as much as we do!

Why this keto chicken salad recipe is different

With a lack of cranberries or grapes, this recipe stands out as more savory than sweet. Not only that, the amount of mayo that some keto chicken salad recipes use is a little unsettling for me, I prefer to use greek yogurt or sour cream when in a pinch. Along with a few extra spices added to the mix, this keto chicken salad recipe is easily my favorite.

Ingredients

  • cooked chicken – about 1/2 lb, or 1/2 of a whole chicken
  • greek yogurt
  • lemon juice
  • curry powder
  • cumin
  • turmeric powder
  • cayenne
  • sea salt
  • celery
  • pecans
  • cilantro
  • green or red onion

Ingredient replacements

Sometimes you’ve just gotta work with what you have, right? There are a few replacements for items if you don’t have them:

  • Greek yogurt – This can easily be replaced with sour cream.
  • Cilantro – Not everyone likes this tasty herb. It can be replaced with fresh parsley, or can simply be omitted.
  • Pecans – Don’t have any? Try cashews or almonds.
  • Onion – I prefer green onion in my salad, but it can be replaced with either red, white or shallots.
