A Keto Chicken Salad is an American classic that has been around since the early 1900s. It was originally made with leftover roast chicken, but now there are many different versions available.

My favorite thing to do after a long day in the sun? Grab a rotisserie chicken from the grocery store on the way home to my hot house. Nope, I don’t feel like turning on the oven to bake something, besides, it’s generally pretty late by the time I drag my brats lovely children from the sandy shore.
Paired with a quick Kale Caesar Salad, rotisserie chicken saves the day for a super quick and delicious dinner. The best part? Leftovers.
I like to save half of the whole chicken, squirrel it away from Nick’s hungry hands, to use for lunches the next day. Yeah, I’m one of those annoying people who is always trying to save a buck here and there. This Low Carb Curry Chicken Salad is such a great way to use up that leftover chicken. Not only that, the amount of mayo that some keto chicken salad recipes use is a little unsettling for me, I prefer to use greek yogurt or sour cream when in a pinch. Along with a few extra spices added to the mix, this keto chicken salad recipe is easily my favorite.
Ingredients
- cooked chicken – about 1/2 lb, or 1/2 of a whole chicken
- greek yogurt
- lemon juice
- curry powder
- cumin
- turmeric powder
- cayenne
- sea salt
- celery
- pecans
- cilantro
- green or red onion
Ingredient replacements
Sometimes you’ve just gotta work with what you have, right? There are a few replacements for items if you don’t have them:
- Greek yogurt – This can easily be replaced with sour cream.
- Cilantro – Not everyone likes this tasty herb. It can be replaced with fresh parsley, or can simply be omitted.
- Pecans – Don’t have any? Try cashews or almonds.
- Onion – I prefer green onion in my salad, but it can be replaced with either red, white or shallots.
Low Carb Curry Chicken Salad recipe
Because the chicken is already cooked, this salad takes minutes to make, which is a huge bonus when having company for lunch or you have hangry children.
Combine the greek yogurt with all of the spices and lemon juice, then whisk to combine. Chop the chicken into bite sized cubes and toss with the dressing.
Chop the onion, mince the celery, roughly chop the pecans into pieces and mince the cilantro. Toss everything together and you’ve got yourself a delicious Low Carb Curry Chicken Salad!

Ingredients
- ½ whole cooked chicken about ½ lb cooked chicken
- ¾ cup greek yogurt
- 1 tbsp lemon juice
- 1 ½ tbsp curry powder
- ½ tsp turmeric powder
- ½ tsp cumin
- 1 pinch cayenne
- ½ tsp sea salt
- 1 stalk celery
- ¼ cup pecans
- 1 tbsp cilantro
- 2 tbsp green onion or red if you prefer

Directions
- In a bowl mix greek yogurt, lemon juice, curry powder, turmeric, cumin, cayenne and salt until fully combined. Chop the chicken into bite sized pieces, then mix into the dressing.
- Mince the celery, onion and cilantro. Chop the pecans. Combine everything together and toss to coat.
