How to make Keto Fettuccine Alfredo
This dish is super fast and easy to make. Here is how to make Keto Fettuccine Alfredo with Chicken and Zoodles:
Start by making the Keto Alfredo Sauce. While it is simmering, the rest of the dish can be made.
Heat a skillet on medium heat and then prep the chicken. Slice the breasts into thirds, horizontally, so that each breast produces 3 chicken cutlets. Season each piece with salt and pepper, then fry in the hot skillet until the internal temperature reaches 165°.
While the chicken is frying and the alfredo sauce is simmering, use a vegetable spiralizer to turn the zucchinis into zoodles.
Once the chicken is cooked and the sauce is ready, toss the zoodles into the saucepan full of alfredo, and bring it back up to a simmer. Cook for 1-2 minutes only, then divide the zucchini noodles between the plates for serving. Chop the chicken breasts into slices and divide between the plates.
Top with grated parmesan cheese and garnish with freshly minced parsley. Enjoy!
Expert Tips
- Be sure to simmer the alfredo sauce long enough so that you have a nice thick sauce. As the zucchini noodles cook down, they will add liquid to the sauce, which is why you want to start with an extra thick sauce.
- Don’t have a vegetable spiralizer? Check out this video for different ways to make zucchini noodles without one.
- Make sure the zucchini noodles are only simmered for a minute or two. We do not want those beauties getting soggy!
- The parmesan and parsley is optional – this dish is still excellent without it. Try Italian parsley and/or grating your parmesan fresh!
