Keto Mini CBN-Infused Cheesecake Bites
All of my readers know how much of a fan of Cheesecake I am, it’s one of my go-to desserts and I have way too many recipes of different varieties on my site and in my personal recipe book. I just can’t help myself. This recipe for Keto Mini CBN-Infused Cheesecake Bites is a little different in that it has CBN oil added which has extra health benefits! As if I needed more excuses to make cheesecake.
Keto Mini CBN-Infused Cheesecake Bites
Equipment
- 1 Oven
- 1 Muffin Pan
- 1 Large Bowl
Ingredients
Crust:
- 1 cup almond flour
- 2 T powdered sweetener of choice Truvia, Swerve, Erythritol
- 4 T unsalted butter melted
- ¼ tsp. cinnamon
- Pinch of salt
Cheesecake:
- 16 oz. cream cheese
- 1 cup powdered sweetener of choice
- 2 large eggs
- 1 tsp. pure vanilla extract
- 1 dropperful Medical Mikes CBN oil
Instructions
Directions:
- Preheat oven to 350 degrees. (Heat can lower the effectiveness of CBN oil, so always bake at 350 degrees or less)
- Line muffin pan with cupcake liners.
- Spray liners with cooking spray. Set aside.
- Make the crust: Combine almond flour, sweetener, cinnamon, and salt in a large bowl.
- Stir in 4 T of melted butter until combined.
- Press one tablespoon of crust mixture into each liner.
- Bake for 5-8 mins or until golden brown.
- Make the cheesecake filling: Beat cream cheese, eggs, sweetener, vanilla extract, and CBN oil in a large bowl with an electric mixer until smooth and creamy.
- Pour filling over cooked crusts.
- Bake for 18-20 mins until tops set.
- Cool in pan.
- Refrigerate for 2 hours.
