Keto Mini CBN-Infused Cheesecake Bites 

All of my readers know how much of a fan of Cheesecake I am, it’s one of my go-to desserts and I have way too many recipes of different varieties on my site and in my personal recipe book. I just can’t help myself. This recipe for Keto Mini CBN-Infused Cheesecake Bites is a little different in that it has CBN oil added which has extra health benefits! As if I needed more excuses to make cheesecake.

Keto Mini CBN-Infused Cheesecake Bites

These mini keto cheesecake bites have rich, creamy, and calming filling in a melts-in-your-mouth crust. Yum. You can whip them up in no time!

Equipment

  • 1 Oven
  • 1 Muffin Pan
  • 1 Large Bowl

Ingredients
  

Crust:

  • 1 cup almond flour
  • 2 T powdered sweetener of choice Truvia, Swerve, Erythritol
  • 4 T unsalted butter melted
  • ¼ tsp. cinnamon
  • Pinch of salt

Cheesecake:

  • 16 oz. cream cheese
  • 1 cup powdered sweetener of choice
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 1 dropperful Medical Mikes CBN oil

Instructions
 

Directions:

  • Preheat oven to 350 degrees. (Heat can lower the effectiveness of CBN oil, so always bake at 350 degrees or less)
  • Line muffin pan with cupcake liners.
  • Spray liners with cooking spray. Set aside.
  • Make the crust: Combine almond flour, sweetener, cinnamon, and salt in a large bowl.
  • Stir in 4 T of melted butter until combined.
  • Press one tablespoon of crust mixture into each liner.
  • Bake for 5-8 mins or until golden brown.
  • Make the cheesecake filling: Beat cream cheese, eggs, sweetener, vanilla extract, and CBN oil in a large bowl with an electric mixer until smooth and creamy.
  • Pour filling over cooked crusts.
  • Bake for 18-20 mins until tops set.
  • Cool in pan.
  • Refrigerate for 2 hours.
  • Enjoy!
