Start by heating up a mini waffle maker. Grate the mozzarella and cheddar cheese and then mix them together.
Crack an egg into a bowl and whisk until the egg white is fully combined with the yolk. Whisk in the almond flour, baking powder, onion powder and then the cheese *see note 1.
Spread half inside the hot mini waffle maker, close the lid and cook for 3 minutes. Remove the chaffle and place on paper towel to cool, then repeat for the second chaffle.
Notes
Want a crisp crust? Only put half of the grated cheese into the egg mixture. Sprinkle some of the remaining cheese on the bottom of the mini waffle maker before the egg mixture, and then sprinkle a little more on top before you close the lid.
If you don't have a mini waffle maker, these Keto Chaffles can be made in a regular waffle maker.
These Keto Chaffles make excellent sandwiches for lunch to-go!
Chaffles freeze really well. Make a whole bunch at once, freeze them with wax paper in between and then just pop them in the toaster to reheat when needed!
