2-3poundsof beef stewing meatcut into 1-inch cubes
Salt and black pepper to taste
One yellow oniondiced
Three cloves of garlicminced
One teaspoon of Italian seasoning
Two tablespoons of tomato paste
1cupbeef broth
1/4cupsoy sauce or liquid aminos
Two bunches of radishestrimmed and halved
Four carrotspeeled and cut into 1-inch pieces
Four stalks of celerycut into 1-inch pieces

1cupfrozen peas

Instructions to make Crockpot Keto Beef Stew:
Step 1: Season the beef with salt and black pepper in a large bowl. Heat a large skillet over medium-high heat and add the beef. Cook the beef until browned all over. Remove from the skillet and add to your crockpot.
Step 2: To the same skillet, add the onion, garlic, and Italian seasoning. Cook until the onion is translucent. Add the tomato paste and cook for 1 minute. Add the beef broth and soy sauce or liquid aminos. Bring to a boil and deglaze the pan, scraping up any browned bits from the beef. Pour this mixture over the beef in the crockpot.
Step 3: Add the radishes, carrots, celery, mushrooms, and frozen peas to the crockpot. Stir well and set the crockpot to low. Cook for 6-8 hours or until the beef is very tender.
Step 4: If you'd like a thicker stew, mix the glucomannan with 1/4 cup of water and stir into the stew during the last 30 minutes of cooking. Enjoy!
