Ingredients
  

  • 1 small onion
  • 3 stalks celery
  • 2 cloves garlic
  • 2 medium carrots
  • 4 small turnips about ¾ lb
  • ½ tsp ground black pepper
  • 2 tsp dried thyme
  • 3 cups cooked turkey about 1 lb
  • 10 cups turkey broth *see note 1
  • fresh parsley

  • Heat the oil in a soup pot on medium high heat. Dice the onion and celery and add them to the pot. Mince the garlic or press it through a garlic press. Peel the carrots and turnips, chop the carrots into thin slices and the turnips into 1/2" cubes.
  • Cook the onions and celery until the onion is translucent and celery is soft. Stir in the garlic until fragrant, about 1 minute, then stir in the turnips, carrots, thyme and black pepper.
  • Chop the turkey into bite sized pieces and add it to the pot. Pour in the broth and bring the Keto Turkey Soup to a boil, reduce the heat to a heavy simmer and continue to cook until the turnips are fork tender, about 20 minutes.
  • Season with salt to taste and then serve hot with freshly minced parsley.

How to make Keto Turkey Broth

I hope you haven't tossed your turkey carcass because that is essential to making Keto Turkey Broth! It's so easy to make turkey broth, and many ways to do so.
The easiest way to make turkey broth is to simply toss the leftover carcass in a big pot of water, bring it to a boil and simmer for a few hours, until the broth has a beautiful golden colour. Strain everything out and you've got yourself a tasty Keto Turkey Broth!
To add even more flavour- Heat a big pot with oil and fry up some onions, carrots, celery and garlic. Add the carcass and continue to fry until the carcass has some colour. Deglaze the pot by adding about 2 cups of water and scrubbing all of the blackened bits from the bottom of the pot. Fill the pot with water, bring to a boil and then continue to simmer for a few hours. Strain everything out and you've got yourself a tasty Keto Turkey Broth!
