Heat the oil in a soup pot on medium high heat. Dice the onion and celery and add them to the pot. Mince the garlic or press it through a garlic press. Peel the carrots and turnips, chop the carrots into thin slices and the turnips into 1/2" cubes.
Cook the onions and celery until the onion is translucent and celery is soft. Stir in the garlic until fragrant, about 1 minute, then stir in the turnips, carrots, thyme and black pepper.
Chop the turkey into bite sized pieces and add it to the pot. Pour in the broth and bring the Keto Turkey Soup to a boil, reduce the heat to a heavy simmer and continue to cook until the turnips are fork tender, about 20 minutes.
Season with salt to taste and then serve hot with freshly minced parsley.
