In a microwave safe bowl, melt chocolate chips with 1/4c whipping cream. Whisk every 30 seconds until fully combined. Set aside to cool.
In a food processor blend 6 Oreos into crumbs. You should get 1/2 cup + 1 tbsp Oreo crumbs. Fill the bottom of a parfait cup with 1/4 cup.
In a stand mixer with the whisk attachment whip the remaining 3/4 cup whipping cream into soft peaks. Add vanilla and whip into stiff peaks. Scrape into a bowl and set aside. With the paddle attachment beat the cream cheese until it's super smooth - no lumps people! Sift the icing sugar into the cream cheese and beat well, scraping down sides as you go. Add 1/2 of the whipped cream to the cream cheese and stir until just combined. In the processor pulse 3 Oreos until roughly crumbled and stir into cream cheese. Spoon half of the Oreo cheesecake into the parfait cup and spread evenly.
Pour half of the ganache over the Oreo cheesecake layer. Sprinkle the second half of the Oreo crumbs over the ganache, saving 1 tbsp for garnish. Spoon the second half of the cheesecake out and spread evenly before pouring the rest of the ganache on top.
Pipe the reserved whipped cream over the ganache and sprinkle with 1 tbsp remaining Oreo crumbs. Grab two spoons and dig in!
