Scrambled Eggs with Leftover Smokies
Got some leftover smokies to use up? You've gotta try this recipe for scrambled eggs with leftover smokies! The fried smokies mix wonderfully with the peppers, red onion, eggs and cheese. A perfect low carb breakfast that will keep you full for hours!
Servings 1 person
- 2 tsp olive oil
- 2 tbsp red onion
- 1/4 bell pepper
- 1 leftover smokey
- 2 eggs
- 1 tbsp heavy cream
- 1/4 cup shredded cheese
Heat a skillet on medium and dice up the red onion and peppers. Slice the smokey and add the oil to the hot skillet. When the oil is hot fry the onion, pepper and smokey until fully cooked. Reduce the heat to low.
Mix the eggs and cream and add to the warm skillet. Cook until the eggs are just about cooked to your liking then add the grated cheese. Serve hot!
