Keto Dinner Rolls

Chewy and crusty, filling and tasty, these Keto Dinner Rolls are easy to make and perfectly paired with soup, or just enjoyed straight up with butter!

Ingredients
  

  • ¼ cup unsalted butter
  • 1 ½ cup almond flour
  • cup whole psyllium husks 30g
  • 1 tbsp baking powder
  • 1 tsp ground sea salt plus coarse for sprinkling
  • 1 tsp onion powder
  • 4 egg whites or ½ cup
  • 1 tbsp apple cider vinegar
  • cup boiling water

  • Heat the oven to 350° and line a baking sheet with a non stick baking mat or parchment paper, then set aside. Bring a kettle of water to boil and melt the butter until fully melted, then set aside to cool.
  • Using a clean coffee grinder, grind the psyllium husks into a fine powder and add it to a medium sized mixing bowl with the almond flour, baking powder, sea salt and onion powder; mix well.
  • Remove 1 tbsp melted butter and set aside for later. Combine the remaining melted butter with the egg whites and apple cider vinegar, then mix well. Pour into the dry and whisk to combine.
  • Bring the water back up to a boil, then, while whisking, slowly pour in 2/3 cup boiling water into the dough. Do not over mix. Let the dough stand for 5 minutes to allow the flours to absorb the liquid.
  • Divide the dough into 10 portions and shape into balls. *see notes* Bake the low carb dinner rolls for about 35-45 minutes, until the crust has slightly browned and there is a hollow sound when the bottoms are tapped.
  • Brush with the remaining melted butter and add an additional sprinkle of sea salt. Cool for a couple of minutes before indulging in bready goodness, or cool to room temperature before packing up.

Notes

Expert Tips

  1. Make sure the water is freshly boiled when added to the dough - this is what activates the psyllium husk.
  2. The dough may be sticky but should hold its shape. To make it easier to work with, you can cover yours hands in olive oil.
  3. To divide the Keto Dinner Rolls perfectly, I recommend using a kitchen scale to make sure your buns are all equal in size.
  4. Yes, these keto buns are baked for a long time, but we want that beautiful crust and chewy center!
  5. Psyllium husk cannot be replaced in this recipe, it is what glues the dough together so that we can shape our Keto Dinner Rolls, and gives them their chewy texture! Some brands of psyllium husk have been known to turn bread purple ( yes it's still edible, just... purple... ) so I stick with the NOW brand and have had luck with my breads staying... well... bread colour...
  6. Use whole psyllium husks rather than psyllium husk powder and grind it yourself using a clean coffee grinder to avoid dense rolls.
