Keto Taco Soup

There’s nothing like a hot, hearty soup to warm you up on a cold winter day. This Keto Taco Soup recipe is the perfect meal to make when you’re craving something comforting and delicious but don’t want to sacrifice your keto diet. Packed with all your favorite Mexican flavors, this soup is my favorite recipe with hamburger meat.

Ingredients
  

  • 1 pound of ground beef
  • One small onion diced
  • One green bell pepper diced
  • One red bell pepper diced
  • Two cloves of garlic minced
  • 1 teaspoon chili powder
  • One teaspoon cumin
  • One teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 14.5 ounces can of diced tomatoes, undrained
  • 1 10 ounces can of enchilada sauce
  • 1 cup beef broth
  • One tablespoon of chopped fresh cilantro.
  • One tablespoon of sour cream
  • One avocado diced
  • Two tablespoons shredded Mexican cheese blend
  • One lime cut into wedges

Instructions
 

  • In a large pot over medium heat, cook the ground beef until browned. Drain any excess fat and remove it from heat.
  • Add the onion, bell peppers, garlic, chili powder, cumin, paprika, salt, and black pepper to the pot. Stir until well combined.
  • Add the diced tomatoes with their juice, enchilada sauce, and beef broth. Stir until well combined.
  • Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in the cilantro and sour cream just before serving. Top each bowl of soup with avocado, cheese, and a lime wedge if desired. Enjoy!
