  • One tablespoon of olive oil
  • 2-3 pounds of beef stewing meat cut into 1-inch cubes
  • Salt and black pepper to taste
  • One yellow onion diced
  • Three cloves of garlic minced
  • One teaspoon of Italian seasoning
  • Two tablespoons of tomato paste
  • 1 cup beef broth
  • 1/4 cup soy sauce or liquid aminos
  • Two bunches of radishes trimmed and halved
  • Four carrots peeled and cut into 1-inch pieces
  • Four stalks of celery cut into 1-inch pieces
  • 8 ounces mushrooms sliced
  • 1 cup frozen peas
  • 1 teaspoon glucomannan optional

Instructions to make Crockpot Keto Beef Stew:

  • Step 1: Season the beef with salt and black pepper in a large bowl. Heat a large skillet over medium-high heat and add the beef. Cook the beef until browned all over. Remove from the skillet and add to your crockpot.
  • Step 2:  To the same skillet, add the onion, garlic, and Italian seasoning. Cook until the onion is translucent. Add the tomato paste and cook for 1 minute. Add the beef broth and soy sauce or liquid aminos. Bring to a boil and deglaze the pan, scraping up any browned bits from the beef. Pour this mixture over the beef in the crockpot.
  • Step 3: Add the radishes, carrots, celery, mushrooms, and frozen peas to the crockpot. Stir well and set the crockpot to low. Cook for 6-8 hours or until the beef is very tender.
  • Step 4: If you'd like a thicker stew, mix the glucomannan with 1/4 cup of water and stir into the stew during the last 30 minutes of cooking. Enjoy!
