Roasted Broccolini, Green Beans and Carrots
These roasted vegetables are packed with flavour and carry the perfect texture. Crisp broccolini, vibrant carrots, crunchy green beans and roasted garlic play together beautifully to create an epic side dish that knows no bounds.
Servings 4 people
- 1 bunch broccolini washed and trimmed
- 4 medium carrots peeled and chunked
- 1 bunch green beans washed and trimmed
- 2 tbsp olive oil
- 2 cloves garlic
- salt and pepper
Heat oven to 400°. Press garlic and add to bowl with oil, salt and pepper. Toss in the broccolini, carrots, green beans and mix well. Work the garlic into the broccolini for optimum flavour.
Bake for 20 minutes or until the broccolini is beginning to crisp and the carrots and green beans are vibrant. Serve hot.
