Keto Shortbread Cookies

Bake up a holiday storm with these delicious Keto Shortbread Cookies. They make an excellent sugar free treat, perfect for gifting!

What you'll need:

Keto Shortbread Cookies

• almond flour • xanthan gum • sea salt • butter • powdered sweetener • vanilla

What you'll need:

Chocolate Glaze

• coconut oil • hot water • cocoa powder • powdered sweetener • vanilla • sea salt • almonds

• Mix together the almond flour, xanthan gum, sea salt, then set aside. • Cream the butter using an electric mixer, then whip in the sweetener until light and fluffy.

• Beat in the vanilla, then stir in the almond flour until just combined.

• Roll the dough between two pieces of parchment paper until it is 1/4" thick. • Refrigerate for 1 hour.

• Heat oven to 325°. • Cut cookies from the dough and place on a parchment lined baked sheet.

• Re-roll the dough and cut cookies until the dough has been used up.

• Bake in the preheated oven for 6-8 minutes, until the bottom of the Keto Shortbread Cookies have browned slightly. • Cool completely on the cookie sheets.

• Melt coconut oil, then whisk in water, cocoa powder, sweetener, vanilla and salt. •  Dip the cookies into the glaze, then sprinkle with chopped almonds and coarse sea salt.

• Cool for several hours for the glaze to set before packaging / stacking
