Chocolate Cupcakes w/ Chocolate Frosting

Ingredients

• almod flour • cocoa powder • instant coffee • baking powder • salt • sweetener • eggs • coconut milk • vanilla

Cupcakes

• unsweetened chocolate • coconut oil • sweetener • cocoa powder • salt • greek yogurt • coconut milk

Frosting

• Whisk together almond flour with cocoa powder, instant coffee, baking powder, salt and xanthan gum.

• Whisk together eggs, vanilla, sweetener and milk.

• Mix dry into the wet until just combined.

• Scoop batter into 6 lined cupcake tins. • Bake for 20-22 minutes at 350°.

• Mince unsweetened chocolate. • Melt chocolate with coconut oil on low power.

• Whisk in sweetener, cocoa powder, salt, vanilla and then yogurt.

• Whisk in coconut milk until desired consistency has been reached.  • Scrape into a piping bag.

• Pipe frosting onto cupcakes.
