Keto Chicken Tortilla Soup
• avocado oil • chicken breast • onion • red pepper • jalepeño • tomato paste • diced tomatoes • shredded cheese • garlic • chili powder • paprika • cumin • oregano • sea salt • cheese crisps or low carb tortilla strips

Combine rub ingredients together and then massage into chicken breasts.
Heat a soup pot on medium high with oil, and then place the chicken inside the pot.
Sear both sides and then remove to a plate for later.
Fry red pepper and onion until onion is translucent, then stir in jalapeños.
Pour 1/2 cup broth into the pot and then scrub all of the blackened bits from the bottom.
Add tomato paste, diced tomatoes and remaining broth.
Place the seared chicken back into the soup and then simmer until the internal temperature has reached 165°.
Remove the chicken from the soup and then using two forks, shred it all.
Stir the shredded chicken back into the soup.
Stir in shredded cheese, then serve Keto Chicken Tortilla Soup with your favourite taco toppings!
