These delicious Keto dessert bars will wow the senses with their creamy texture and vibrant flavour.

Strawberry Sauce

1 cup diced strawberries

1 tbsp monk fruit sweetener

1 tsp lemon juice

1/2 tsp lemon zest

Cheesecake Filling

2x8oz full fat cream cheese

1/2 cup powdered monk fruit

2 eggs

1/2 cup full fat sour cream

2 tsp lemon juice

1 tsp vanilla extract

Cheesecake Crust

1 cup almond flour

1/4 cup almonds

1 tbsp golden monk fruit

1/4 cup butter

1/2 tsp cinnamon

1 pinch sea salt

The perfect ratio of sweet and tart, creamy and crunchy.

Strawberry Sauce

Cook strawberries into sauce pan with lemon juice, lemon zest and monk fruit on medium high and bring to a boil

Reduce heat to simmer for 8 minutes and blend sauce to a puree.

Almond Crust

Heat oven to 325 degrees and line 8x8 pan with parchment paper and spray with oil.

Cut up almonds into a fine crumble. Mix all crust ingredients together and press crumbs evenly into pan.

Cheesecake Layer & Swirl Design

Mix all the filling ingredients in a bowl and poor batter into pan.

Add strawberry sauce into a piping bag and draw vertical lines all the way down the pan.

Keto Cheesecake Bars

Take a chopstick or knife and run through the lines, back and forth horizontally, to create a beautiful design

Bake for 30-35 minutes. Turn oven off and leave door open

Bake Cheesecake

Rest in the over for 1 hour. Then refrigerate for over night. Slice and enjoy!
