Almond Flour Tortillas

• almond flour • psyllium husk • sea salt • olive oil • egg • water
Grind psyllium husk into a fine powder with a clean coffee grinder.
Make the dough
Mix ground psyllium husk with almond flour and salt.
Mix egg and olive oil into the dry.
Careful mix in boiling hot water with a wooden spoon.
Divide dough into 4 equal portions. A kitchen scale works great for this!
Form the tortillas
Place one ball of dough in between two pieces of parchment, and press into a tortilla.
Carefully remove the top piece of parchment.
Flip into a skillet on medium heat, then remove the parchment paper.
Cook the tortillas
Fry for 30 seconds - 2 minutes, flip, and fry 30 seconds - 2 minutes longer.
