It was my sister’s birthday the other day and the party at my house. We barbecued up some smokies for an easy and delicious birthday dinner! The problem was there were sooo many smokies left over! I mean, come on, a girl can only eat so many smokies without turning into one, right? So I decided to switch it up and create this quick and easy low carb breakfast!

Delicious.

Now I find myself making extra smokies for the family just so I can have Scrambled Eggs with Leftover Smokies for breakfast the next day!

How to Make Scrambled Eggs with Leftover Smokies

Simply fry up the sliced up smokies, pepper and red onion. Add whisked eggs and once cooked, top with shredded cheese. You’ve got yourself a deliciously quick and filling breakfast! This recipe has been written for one person, but can easily be doubled, tripled, quadrupled, or whatever your needs may be!

What makes scrambled eggs fluffy?

Who doesn’t love fluffy scrambled eggs? Although it seems easy, cooking those eggs perfectly takes some practice and patience. Some say the more you whip the eggs prior to cooking, the better, because air gets whipped into the eggs. Others say it’s about stirring the skillet gently to avoid breaking the air bubbling.

For me it’s all about the proper heat. Cooking eggs using a pan that’s too hot will turn them hard. I add my eggs to a warm skillet, then cook them low and slow.

What can I put in my scrambled eggs?

Well just about anything! I love to put different things in my scrambled eggs! They are the best way to start the day and go so well with a lot of different meats, vegetables and cheeses. Try onions, spinach, peppers, mushrooms, tomatoes, or my favourites broccoli and corn! Want a creamy texture? Add some avocado and feta cheese! Smokies of course are delicious in scrambled eggs but why not try a Maple Breakfast Sausage or Italian Sausage?

Ingredients

  • 2 tsp olive oil
  • 2 tbsp red onion
  • 1/4 bell pepper
  • 1 leftover smokey
  • 2 eggs
  • 1 tbsp heavy cream
  • 1/4 cup shredded cheese

Instructions

Directions

  • Heat a skillet on medium and dice up the red onion and peppers. Slice the smokey and add the oil to the hot skillet. When the oil is hot fry the onion, pepper and smokey until fully cooked. Reduce the heat to low.
  • Mix the eggs and cream and add to the warm skillet. Cook until the eggs are just about cooked to your liking then add the grated cheese. Serve hot!
