This Low-Carb Cheesy Loaded Cauliflower Bake combines the creamy, cheesiness of a classic macaroni and cheese and the amazing fix-ins (hint BACON) from a twice-baked potato, into one incredible casserole. You definitely want to cook the cauliflower a little first so that it doesn’t take forever in the oven. And I tell you, After another 10 minutes of baking the whole thing, you won’t be able to stand it any longer!
This Low-carb Cheesy Loaded Cauliflower Bake for me is a standalone meal by itself but it can also be a perfect pair with other main dishes. Serve it side to side with Italian Sausage Links or Baked Chicken Wings, pair it with Keto Ribs or Keto Turkey Roast, and the list could go on and on.

In case you wanna add more to this recipe and spice things up, feel free to do so! There are a lot of ways you can customize your loaded cauliflower casserole to your liking but here are some of my preferred ones.
I tend to like things spicy, so a few thinly sliced jalapeños would be awesome, especially if coupled with a few small dollops of cooling sour cream.
Slices of avocado might also be nice.
And if you want to take this recipe in a different direction, a light drizzle of sweet and tangy Keto BBQ sauce would be an amazing compliment to the creamy, cheesy sauce.

1 large head cauliflower cut into small florets
2 tablespoons butter melted
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
1 cup Sour cream
1/4 cup Heavy cream
4 ounces cream cheese cut into small pieces
4 cloves garlic minced
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon mustard powder
1 teaspoon Ranch powder
2 cups Cheddar cheese shredded and divided
12 bacon slices cooked and chopped
1/4 cup Green onions chopped and divided
How to make:
Preheat the oven to 450 degrees F.
In a large bowl, toss cauliflower florets with melted butter, salt, and pepper and transfer to a small 1.5-quart casserole dish in a single layer.
Roast in the preheated oven for 15-20 minutes, until crisp and tender.
In another bowl, whisk together the sour cream and heavy cream, until smooth.
Add minced garlic, 1 cup shredded cheddar cheese, half of the chopped cooked bacon pieces, half of the green onions, plus onion powder, paprika, mustard powder, and ranch powder. Season with salt and black pepper and stir to combine.
When the cauliflower is done roasting, add it to the bowl with the sauce and mix it to combine it and coat it well.
Return the cauliflower mixture to the casserole dish. Top with the cream cheese pieces and any remaining cheese and bacon bits.
Bake for 5-10 minutes, until the cheese melts. Top with remaining green onions and serve.
