If there’s anything better than a hot bowl of something filling and nutritious at the end of a cold winter day, besides a child free hot bath, you’ll have to let me know, because I can’t think of a single thing.

Beef stew has always been a weakness for me, and by weakness I mean I don’t know where to stop.. I always end up eating WAY too much, especially when you toss biscuits into the mix! This Low Carb Beef Stew hits all the right notes of deliciousness, I can’t wait to read what you have to say about this keto beef stew – let me know in the comment section after you make it for yourself!

Why it works

  1. You’ve got melt in your mouth beef, an assortment of perfectly cooked vegetables and that flavour? Out of this world delicious!
  2. All you need is one pot that is oven and stove top safe, like a cast iron dutch oven, to make this Low Carb Beef Stew. Less mess to clean! Yay hooray!
  3. This keto beef stew is super filling on it’s own, although there are lots of yummy side dishes to pair it with if you like!
  4. Family approved! Everyone loves this hearty dish, even the kids!
  5. We use lower carb vegetables to keep this dish as low in carbs as possible without losing out on texture and flavour.

Ingredients

Low Carb Beef Stew

  • chuck roast
  • avocado oil
  • sea salt
  • ground black pepper
  • celery
  • onion
  • carrot
  • turnip
  • garlic
  • dried thyme
  • organic low sodium beef broth
  • canned organic diced tomatoes
  • worcestershire
  • organic tomato paste
  • red wine vinegar

The Beef – The best cut for stew is chuck, although round would also do the trick.

Beef Broth – I always go for organic beef broth that has not been loaded with salt. If you can’t find a low sodium beef broth, you can use regular organic beef broth, but may have to add less salt to your stew than the amount that is in this recipe.

Diced Tomatoes and Tomato Paste – Look for organic, non GMO diced tomatoes and tomato paste, that have little to no additives.

Thickening

  • xanthan gum
  • olive oil

Xanthan Gum – We use xanthan gum in this recipe to thicken the keto beef stew. Xanthan gum is great for thickening soups and sauces like in this Keto Mushroom Sauce, and also works to bind ingredients together in baking like in this Keto Calzone recipe.

Make it lower carb

If you would like to make this dish lower in carbs, you could remove some of the higher carb ingredients. This is how many net carbs each ingredient adds to each bowl:

  • carrot: 0.4 g net carbs
  • turnip: 0.6 g net carbs
  • tomato paste: 0.8 g net carbs
  • diced tomatoes: 1 g net carbs
  • worcestershire: 0.5 g net carbs

You can pick and choose something to remove, however, all of these delicious ingredients combine to make an ultra tasty low carb beef stew.

How to make Low Carb Beef Stew

Heat the oven to 300°. Grab an oven and stove top safe soup pot and heat it on medium high heat with 2 tbsp avocado oil. Take the beef and chop it into 1-2″ pieces and then toss it with 1/4 tsp sea salt and 1/4 tsp black pepper.

Cutting board with chuck roast cut into 1-2" pieces.

Sear the beef on both sides in batches so that the bottom of the pot is not over crowded; Let the pot heat back up in between batches. Remove the beef and set aside for now.

While the beef is searing, get the veggies chopped! Dice the onion, chop the celery, peel and slice the carrots, peel and chop the turnip into 1″ cubes and then peel the garlic and either press it through a garlic press or mince it finely.

Once all of the beef has been removed from the pot and it is hot once again, add the celery and onion, reduce the heat to medium and then cook until the onion is translucent. Stir in the garlic, remaining sea salt and black pepper, dried thyme, carrots and turnip. Continue to stir for a couple of minutes until the garlic and thyme becomes aromatic.

Cast iron dutch oven with onion, celery, carrots, turnip and seasonings next to a bowl of seared beef.

Pour in 1 cup beef stock and, using a wooden spoon, scrape all of the little bits from the bottom of the pot. Add the worcestershire, tomato paste, red wine vinegar, beef and stir well to combine.

Cast iron dutch oven with stew, ready for the last of the beef broth.

Pour in the remaining 3 cups of beef broth, stir, and then bring the keto beef stew up to a boil. When the stew has boiled for a minute or two, place the lid on top of the pot and place the whole thing in the oven; bake for 3 hours.

To thicken

Combine the olive oil and xanthan gum in a little bowl and mix well, then, while stirring the stew, slowly pour the xanthan gum mixture into the stew to thicken. Continue to stir for a minute or two to ensure the xanthan gum is evenly incorporated. Divide into 6 portions and serve hot with Low Carb Biscuits!

This stew is amazing. I’ve never made a stew in the oven. Only stove top. But this is so good! I didn’t use xanthan gum as it was thick enough. Family was blown away. Yippie to a new recipient! Thank you.

    1. Aleta says:

Hey Marla, I am so glad you and your family love this stew so much! I am in love with using the oven, I find the flavour and texture of the stew the best this way!

  13. CaptMama says:

What step do you add the diced tomatoes???? LOL I made this and it looks and smells great. In 2.5 hours I will see what is tastes like. I added the diced tomatoes with the Worcestershire even though nowhere in the recipe does it say add tomatoes even though they are listed in the ingredients …

    1. Aleta says:

Oh my goodness! Thank you for bringing this to my attention – I did forget to put them in the instructions, but yes, you were totally correct, they are put in with the worcestershire 🙂

  14. Jenn says:

I don’t have a pot that goes from stovetop to oven. Could I just leave it on the stovetop to cook for the 3 hrs? Low heat? Sounds delicious and I really want to try it!!

    1. Aleta says:

Hey Jenn! Yes you can simmer it on low for a few hours, or better yet, do you have a crock pot? Get the stew right up until it is supposed to go into the oven, but instead put it in your crock pot and either cook it on low for 5-6 hours or 3-4 on high 🙂
      Hope you enjoy!

  15. Carol Aguilar says:

Love this low carb stew. I cooked in my crock pot as it is 100+ degrees everyday here in Texas right now. My son and hubby both enjoyed it. They were surprised that I used turnips and not potatoes. Definitely a keeper. Thanks for sharing your recipes.
