Besides the incredible health benefits, one of the most exciting things about eating low carb is when you get to enjoy the foods you never thought you would be able to eat without the guilt. Meatballs? Smothered in BBQ sauce? In a Panini? I know, crazy right?
This Low Carb BBQ Meatball Panini is way better than it’s carb loaded look-alike because you can eat it, guilt free, and stay on the path to good health and weight loss!

How to make a Low Carb BBQ Meatball Panini
I always hide 8 Low Carb Mini Meatballs with BBQ Sauce whenever I make them for dinner, just so that I can make this panini for lunch the next day! Here is how to make it:
Reheat (or make) 8 Low Carb Mini Meatballs with BBQ Sauce until the internal temperature reaches 165° and heat a panini grill on high.
Make your low carb sandwich bread; for this recipe I prefer Tomato Basil Low Carb Flatbread. You would get two sandwiches out of one full recipe and cut the bread into quarters.
Spread some mayo on the inside of both top and bottom bread. Layer aged cheddar cheese on the bottom bread, top with the heated meatballs and then the top bread.
Grill on the preheated panini grill until the cheese starts to melt. Drooling yet?
These little savoury balls of heaven are made with ground beef, onion, garlic, salt, pepper, almond flour and an egg. They get formed into little balls and baked with this delicious Low Carb BBQ Sauce!
Appie night gets a lot better with these mini meatballs at the table or you can eat them straight up with a fresh garden salad. The best part? They are super easy to make, so if you want to whip them up just for this panini, it’s no biggie!
I’ve been creating a lot of low carb breads lately, clearly the winter has set in and the crave for soups with bread has hit an all time high. The inspiration for this one came to me because I had some fresh basil to use up and also some leftover meatballs.
There are a lot of breads that would pair wonderfully with bbq mini meatballs, however, this particular flatbread grills beautifully and the combination of fresh basil to the hickory smoked flavour of the bbq sauce is just unbeatable.
