I am super excited to share this recipe with you lovely people! These lemon herb chicken thighs are bursting with lemony love and marinated with Italian herbs. They are simple to whip up, can be left to marinate for hours or tossed together and fried right away.

When my husband is out of town working I like to fry up a batch of these beauties and devour them for multiple dinners in a row!

These lemon herb chicken thighs are a staple in my life. They are perfect to add some delicious protein to the top of your favourite salad or can be made into a lemony version of chicken salad!

What spices go well with lemon and chicken?

Soooo many spices blend beautifully with lemon and chicken! Garlic, Onion, oregano, rosemary, basil, thyme and paprika are my favourites! In this recipe I use garlic powder as well as Italian spice which is a wonderful blend of some of my favourite spices!

How to make Lemon Herb Chicken Thighs on the stove

Zest the lemons and juice them. Add all of the ingredients except the chicken thighs into the ziplock bag and give a good shake. Add the chicken thighs and mix well. If you don’t have time you can cook them right away, or if you do, marinate for 2-12 hours.

Heat a skillet on medium. Once hot, dump the contents of the ziplock bag into the skillet and cook until the internal temperature of the chicken thighs reach 180°. I find adding a lid to the skillet helps cook the chicken faster.

How to cook thighs on the barbecue

When the chicken thighs have finished marinating heat your barbecue. Create a tin foil boat for you thighs by stacking a few pieces of tin foil together and folding up the sides by about two inches.

Place the thighs inside your boat, add a top piece of tin foil and secure them by twisting the edges together.

Barbecue on medium low for 15-20 minutes or until the internal temperature reaches 180°.

How to cook thighs in the oven

When the chicken thighs have marinated and you are ready to cook them, heat the oven on 350° and dump the contents of the marinade into a baking dish.

Bake for 15-20 minutes or until the internal temperature reaches 180°.

Lemon Chicken Salad

Dice up these delicious yummy Lemon Herb Chicken Thighs and throw in some mayo, salt, pepper, green onion and celery to make a lemon chicken salad!
