So… tacos… I love tacos! They are so great, you can make them with just about anything! Veggies, chicken, however beef is my favourite because there are so many things you can do with the leftovers! I seriously got my heart on fire over beef tacos. Can I feed my family this daily? Oh most definitely.
My three year old loves tacos! Well, she loves to ‘help me’ ‘make tacos’. It’s so cute! Using my favourite cutting board I dice up all of the taco toppings we like and pass them to her, then she puts them all into little dishes and carries them to the dinning room table. Besides that she ‘helps’ by taste tasting everything I chop up. Especially the cheese… ‘Okay Hun, no more cheese or I’ll have to grate another brick’… (This kid seriously loves cheese. Since she began to walk at 10 months old, it’s been an ongoing battle to get her to ask me for a slice of cheese rather than just taking the whole brick from the fridge and digging in!) During dinner we thank her for ‘making dinner’. She is so proud of herself! She says ‘you’re welcome!’ It seriously melts my heart!
Leftover taco meat recipes
There are so many things you can do with leftover taco meat, but one of my favourite dishes to make is Mexican Scrambled Eggs. The taco seasonings pair wonderfully with eggs and I use my favourite taco ingredients to amplify the flavour! Whatever I have left after dinner, whether it be onion, peppers, tomato, avocado, corn or black beans, it all works well in this Mexican Scrambled Eggs!
Another great use of leftover taco meat is this delicious recipe for Mexican Breakfast Burritos! They are fully loaded breakfast wraps with taco seasoned ground beef (or leftover taco meat of your choice), jalapeños, red onion, black beans, chipotle mayo and more! Perfect for breakfast to go!

Mexican Scrambled Eggs
- 1/4 cup leftover taco meat
- 2 tbsp white onion diced/optional
- 2 tbsp peppers diced/optional
- 2 tbsp tomatoes diced/optional
- 2 tbsp avocado diced/optional
- 2 tbsp corn optional
- 2 tbsp black beans optional
- 2 eggs
- 1 tbsp heavy cream
- 1/4 cup cheddar cheese grated
- Heat a skillet on medium. Cook onion and peppers until the onion is translucent. Add the taco meat, tomatoes, corn and black beans and cook until thoroughly heated.
- Scramble eggs with milk and add in avocado. Pour into the skillet and fry until the eggs are fully cooked. Sprinkle on the cheese and cook until melted. Serve hot and enjoy!
