Got a cookie crave? These Keto Chocolate Chip Cookies are super easy to create ready in a flash!
COOKIES!!!
Who doesn’t love a good chocolate chip cookie? Buttery soft cookies loaded with chocolate? Not a lot to frown at in this combo. As my best friend would say:
You can’t trust anyone who doesn’t like chocolate.
– Alysse Spring 2019
I believe that also goes for these low carb chocolate chip cookies. These little beauties are just so dang delicious, the biggest problem I have found is stopping at only one. I hope you love these Keto Chocolate Chip Cookies as much as I do!
Why it works
- With only 10 minutes of prep and another 7-9 to bake, these Keto Chocolate Chip Cookies are ready in no time!
- Perfectly sweetened and balanced, you’ve got yourself a low carb chocolate chip cookie that is not only delicious, but can be enjoyed guilt free!
- Loaded with buttery goodness and chocolate chips, these cookies are the ultimate sugar free snack, perfect for any age!
Ingredients
- almond flour
- baking soda
- sea salt
- cinnamon
- room temperature unsalted butter
- powdered monk fruit / erythritol sweetener
- sukrin gold sweetener
- vanilla
- an egg
- sugar free chocolate chips
Powdered Monk Fruit / Erythritol Sweetener – I love the monk fruit / erythritol blends and buy either Lakanto or SoNourished. I always choose the granular because it only takes a few seconds to turn it into powder form, which saves a few bucks. To do so, use a clean coffee grinder, fill with some granular sweetener and grind for a few seconds until it turns into powder. I like to make a bunch at one time and store it in a ziploc bag for future use.
Sukrin Gold Sweetener – Sukrin Gold is a brown sugar replacement that has been sweetened with erythritol. I use it all the time, especially in recipes like this Low Carb BBQ Sauce and these delicious Low Carb Baked Chicken Wings.
Sugar Free Chocolate Chips – I like to use Lily’s Sugar Free Chocolate Chips for all my chocolatey-chipy needs. They are made with high quality chocolate and sweetened slightly with stevia. Can’t find any? Chop 75-85% dark chocolate into chunks and replace the chips with the chopped chunks for some delicious Keto Chocolate Chunk Cookies.
Keto Chocolate Chip Cookie recipe
I love that when the crave for cookies hits, I can make these yummy treats in under 20 minutes! Here’s how to get the job done:
Heat oven to 350° and line two baking sheets with non stick baking mats or parchment paper.
Combine the almond flour, baking soda, salt and cinnamon and whisk to combine, breaking up any clumps of almond flour there may be. Set the bowl aside.
In a separate bowl use a hand blender or stand mixer to whip the soft butter until it’s nice and creamy, then blend in the powdered sweetener and sukrin gold until fully combined. Blend in the vanilla and egg, then mix in the flour mixture until just combined. Fold in the chocolate chips.
Scoop the dough out onto the baking sheets using a medium sized cookie scoop. You should get about a dozen cookies. Place 6 cookies on each cookie sheet and spread them out evenly. Sprinkle the tops with extra sea salt.
Bake in the preheated oven for 7-9 minutes, until the bottoms have browned. Let the keto chocolate chip cookies cool completely on the baking sheet before removing. ( Not necessarily before eating 😉 )
Watch it all go down!
Expert Tips
- Before you begin, make sure your butter is at room temperature so that is it nice and soft.
- Can’t find sugar free chocolate chips? Grab a high quality dark chocolate (75 – 85%) and chop it into chunks. Replace the chips with the chocolate chunks for delicious Keto Chocolate Chunk Cookies.
- Once the egg and vanilla are added to the butter / sweetener, the mixture will appear ‘broken’. That is totally okay! Just mix the egg and vanilla in as best you can before moving on.
- Fold the flour mixture into the butter until just combined. Do not over mix.
- I like to use a medium cookie scoop. ( about 2″ in diameter) That size makes the perfect sized cookies!
- Bake the cookies until the bottoms have browned – the cookies will still be soft in the middle!
- If the keto chocolate chip cookies have not completely cooled, they may break when you go to move them from the baking sheet. Ensure they have cooled to room temperature before packaging them up in an air tight container.
How to store Keto Chocolate Chip Cookies
These beauties can be stored in an air tight container, like a cookie jar, on the counter for a couple of days.
With a dozen low carb chocolate chip cookies at your disposal, you may want to freeze them so that they can last a little longer. Simply toss them into a freezer ziploc bag, with wax paper in between each cookie for easy removal, then put them in the freezer like these Chocolate Peanut Butter Freezer Cookies! They will last 4-6 months in the freezer.
