Packed with all the flavour and none of the beans, this Keto Chili is crazy delicious and super easy to make!
Yummmm who doesn’t love a big ol’ bowl of chili at the end of a winter day, or, if you like chili as much as I do, halfway through a hot summer day. Nothin’ like cursing your own crave while sweatin’ over a hot bowl of spicy chili when it’s 85° inside the house!
Trust me though, this Keto Chili is 100% worth it. I hope you love it as much as we do!
Why it works
- We remove the traditional beans to make this chili keto friendly, and replace them with three different types of meat for flavour and texture.
- How spicy do you like your Keto Chili? Make it your own by choosing the spice level.
- This Keto Chili freezes great! Pack any leftovers and store them in the freezer, then simply thaw and reheat for a great lunch to go or fast dinner.
- Though it will take some time to make this Keto Chili, it is super easy and soooo tasty, you won’t mind the wait. If you don’t have the time, check out this Instant Pot recipe.
Keto Chili Ingredients
- avocado or olive oil
- Italian sausage
- celery
- onion
- red bell pepper
- jalapeño peppers
- garlic
- dehydrated red pepper flakes
- ground beef
- chili powder
- paprika
- cumin
- sea salt
- ground black pepper
- beef broth or bone stock
- canned organic diced tomatoes
- liquid hickory smoke
- golden monk fruit sweetener
- pulled pork
Italian Sausage – To keep the spice on the mild side of spicy, I use Mild Italian sausage in my Keto Chili. If you like yours super hot, try Hot Italian sausage.
Beef Broth or Bone Stock – I always choose Bone Stock for any of my soups and stews whenever I have some kickin’ around, otherwise beef broth works perfect in this Keto Chili.
Golden Monk Fruit Sweetener – I find Lakanto’s Golden Monk Fruit Sweetener perfect in this Keto Chili. Don’t have it? You can use your sweetener of choice instead.
Pulled Pork – Pulled Pork adds a delicious texture and flavour to this Keto Chili, and just wouldn’t be the same without it. I make this Instant Pot BBQ Pulled Pork, and either make this Keto Chili the next day, or freeze the pulled pork I’ll need to make the chili for another day.
How to make Three Meat Keto Chili
Heat the oven to 300°. Grab an oven and stove top safe soup pot, like a cast iron dutch oven, and heat it on the stove on medium high heat with a tsp of avocado oil. Once hot, sear the Italian sausages and chop the onion, celery and red bell pepper. Remove the sausage from the pot once all sides are golden and set aside to cool.
Add 2 tsp avocado oil to the pot and fry the chopped veggies until the onion and celery are soft. While they are frying, slice up the Italian sausages, dice the jalapeños (see notes) and mince the garlic or press it through a garlic press. Add the jalapeños and garlic to the pot along with the red pepper flakes, then give it a stir.
Add the ground beef and sliced Italian sausages and continue to cook until the beef is no longer pink.
Pour in the diced tomatoes, beef broth, liquid hickory smoke, sweetener and the pulled pork, the stir until fully mixed.
Bring the Keto Chili to a boil, place a tight fitting oven safe lid on top, and then place the whole thing in the oven. Bake for 2 hours, remove from the oven, give it a quick stir and divide into 6 bowls. Serve hot by itself or with sour cream and shredded cheddar.
Heat Control
How spicy do you want your Keto Chili to be?
SUPER MILD – Use Mild Italian sausage, remove and discard all of the jalapeño seeds and white pith, and either cut back the dehydrated red pepper flakes to 1/4 tsp, or remove completely.
MEDIUM – The way I like my chili, some spice without being too hot, use Mild Italian Sausage, remove and discard half of the jalapeño seeds and all of the white pith. Leave the dehydrated red pepper flakes at 1/2 tsp.
SUPER HOT – Use Hot Italian Sausage and keep all of the jalapeño seeds and white pith. Still not hot enough? Increase the amount of dehydrated red pepper flakes or think about adding some extra spicy peppers like habanero or cayenne.
Expert Tips
- When handling jalapeño peppers, be careful because their juices can burn your skin. I always use gloves and be careful when chopping because their juices can squirt up. If you get it on your hands or face, first wash the area with olive oil to remove the bond, and then with warm water and soap.

I like my chili spicy so I appreciate the heat control section with options on how to make it nice and hot.
Looks delicious, especially for the meat eaters in my family. I’m sure the keto people love a straightforward chili like this but I just gotta have the beans.
This dish looks yummy and full of flavors. Best for a comfort meal for sure. Presentation tempting.
I love how meaty this is! We like it spicy in our house, so great to be able to take it up a notch!
This chili recipe hits all the right comfort food notes. Lots of meat, lots of veggies and lots of spice.
Great recipe to try for all meat lovers. So delicious!
Looks delicious and doable even on a weeknight. Chili is such a comforting food especially when its cold outside.
Love this keto recipe. Now I know how to make chili the keto way.
Thanks Sophie 🙂
This is one chili that will thrill the carnivores in our family. It is a stew that’s perfect to make ahead and have when everyone is over. I thought I’d keep it in the slow cooker so everyone can help themselves. This is just the thing for the cold damp weather we’re having.
Such a great idea Marisa!
Yum! I am all for the combination of the sausage, beef, and pulled pork in this delicious chili recipe! This is going to be such a cozy recipe to help keep warm through the rest of winter, but I could honestly eat chili year-round!
Thanks Jenni!
I’m in the process of making the chili now, I don’t see instructions on when to add the seasonings, I put them in before I put in the oven, hope it works out
