Warm biscuits smothered in sausage gravy?! For breakfast?! Whoever came up with this dish was pure genius. I mean I get the biscuits.. and the sausage.. but then how it became all loaded with gravy is beyond me! All I know is how well it works, and if you’re in the mood, throw a couple of fried eggs on top!

My favourite day of the week to make Keto Biscuits and Gravy is Saturday. We usually have a lot going on that day, so love to have a filling meal in our bellies. I hope you love this Keto-fied recipe as much as we do!

Why it works

  1. Ready in less than 30 minutes, Keto Biscuits and Gravy is a quick way to get in a filling breakfast to start the day.
  2. Loaded with flavour and spice, this southern comfort breakfast is super delicious!
  3. Savoury biscuits play beautifully with the Italian sausage and red pepper flakes, bringing it home with a delicious and creamy gravy.

Ingredients

All ingredients used in this Keto Biscuits and Gravy recipe.

Italian sausage – My favourite meat to use in this Keto Biscuits and Gravy recipe is ground mild Italian sausage. Ground breakfast sausage can be used instead, or kick it up a notch with hot Italian sausage.

Spicy spaghetti seasoning – One of my favourite seasonings of all time, Spicy Spaghetti Seasoning is easy to make and excellent in recipes such as Pizza Crust, Meatballs and more! If you don’t have any, and don’t want to make it, it can be replaced with Italian seasoning.

Xanthan gum – We use xanthan gum to thicken the gravy. To thicken the gravy without using xanthan gum, you’ll have to simmer the gravy for about 15 minutes until the heavy whipping cream thickens, and you’ll need to add about an extra 1/2 cup heavy whipping cream and 1/2 cup chicken broth to have enough liquid. I find it tastier and much easier to use the xanthan gum.

How to make Keto Biscuits and Gravy

Heat your oven to 425° and spray a muffin tin with oil. In one bowl whisk together the almond flour, baking powder, garlic powder and spicy spaghetti seasoning until all lumps are gone. In a medium bowl whip the eggs until smooth, then whisk in the sour cream and melted butter.

Two bowls, one with the dry mix and another with the wet mix.

Stir the almond flour into the wet ingredients until just combined, then fold in the grated cheddar cheese. Divide the batter into 8 and scoop into the oiled muffin tin. Bake in the preheated oven for 10-12 minutes.

8 baked biscuits in a muffin tin.

Dice the onion finely and either mince the garlic or press it through a garlic press. Heat a skillet on medium high with oil and once hot, fry the diced onions until translucent. Stir the garlic in until fragrant, then add the ground Italian sausage, red pepper flakes and black pepper. Cook until the sausage is no longer pink, breaking it up as it cooks.

Fried sausage in a skillet.

Add the chicken broth and warmed heavy whipping cream, then sprinkle in the xanthan gum. Stir well, bring to a simmer and cook until the gravy is thick, about 2 minutes.

Skillet with finished sausage gravy beside a muffin tin full of biscuits.

Serve the Keto Biscuits and Gravy with freshly minced parsley.

Expert Tips

  1. Be sure to warm the heavy cream before adding it to the hot sausage, otherwise it might curdle.
  2. If you know you won’t be eating the whole recipe in one sitting, and will most likely have leftovers, use less xanthan gum. It tends to get more gummy when reheated.

We all eat keto in our house and I was struggling with breakfasts, especially for the weekend when we can all gather together and enjoy a leisurely breakfast.
