Classic Keto BLT

Just because you’re eating Keto, doesn’t mean you have to skip out on the BLT love! All that crunchy bacon and fresh, crisp tomato, piled high on a sandwich with lettuce and mayo. Yup, lunch really doesn’t get much better than that!

The Bread

  • almond flour
  • parmesan cheese
  • baking powder
  • sea salt
  • onion powder
  • cheddar cheese
  • olive oil
  • an egg
  • unsalted butter

How to make a Classic Keto BLT

Heat a skillet on medium heat and fry the bacon until crisp, then place on paper towel and set aside.

While the bacon is cooking, add the almond flour to a microwave safe dish, round or square, about 4-5″ wide. Mix in the parmesan cheese, baking powder, onion powder and sea salt. Stir, then mix in the shredded cheddar, olive oil and egg. Whisk until fully combined.

Microwave for 90 seconds, allow the bread to cool for a minute or two, then remove the bread from the dish. Heat a skillet on medium high heat with the butter. Carefully slice the bread in half, horizontally, so that you end up with two thin slices.

When the butter is nice and hot, add the bread to the skillet. Cook until golden, then flip both over and cook until all sides of the bread are golden and crisp.

Remove from the heat and cover both pieces with the mayo. Place slices of tomato on the bottom bread, a piece or two of lettuce, the cooked bacon and then place the top bread on top. Enjoy!

Expert Tips

  1. Have your own favourite keto bread? Use it instead!
  2. If the bread isn’t fully cooked after the 90 seconds are up, microwave for an additional 10 seconds.
  3. Don’t have a microwave? Spray an oven safe dish, 4-5″ wide, with cooking spray oil and then add the mixed bread ingredients. Bake it in a 350° oven for about 15 minutes, until the bread it fully cooked through. Continue on with the slicing and frying method.
  4. Be sure the butter in the skillet is nice and hot before adding the bread so that is gets golden and crisp.

  • 1 tbsp mayonnaise

  • 1 tbsp cheddar cheese shredded
  • 1 tbsp olive oil

  • Cook until the bread is golden, then flip both sides over and cook until the other sides are golden as well. Remove from the heat and cover both pieces with the mayo. Place the slices of tomato on the bottom bread, the lettuce, cooked bacon and then place the top bread on top. Enjoy!

    I can’t use almond flour, is there a way to sub coconut flour? I know it will be sweeter.

      Hey Elaine! Unfortunately coconut flour cannot be subbed directly with almond flour. You could try the ingredients from this recipe from HealthyRecipes and just follow along with the rest of the instructions for the BLT, if you like.     I don’t have olive oil is there any substitute for it?

      Do you have refined coconut oil? (I saw refined because it has no coconut flavour) You could melt that down and use it instead, or what other types of oil do you have?
