Mmm mmm there isn’t a whole lot more satisfying than creating a big ol’ bowl of chicken, noodles and vegetables. Load ’em up with saucy goodness and you’ve got yourself a dreamy dish of goodness. I loooove me some teriyaki. If no other sauce in the world existed, I wouldn’t even mind.

The inspiration for this dish came from when I spent 6 weeks in the hospital last year when both my little girls were super sick with rare kidney issues. You can read more about that here. I had no family around to bring me food because the children’s hospital is a long ways away from home, so I had to either pick through the ‘meal’ they brought or warm something up from the stash of food I packed with us.

Trust me, sometimes it got real bad. I’ll never forget when we had to switch rooms and the nurse for some reason changed the food type from ‘normal’ to ‘toddler’. Being that my 7 month old was yet to eat solids and was crazy sick so barely drank milk, the mashed broccoli and pureed chicken they served me for dinner one night went completely to waste. #barf

The best times were when my husband visited us on the weekend. There was this healthy station in the hospital cafeteria where we got to choose our protein, noodle, sauce and vegetables. It was SO. GOOD.

I always went for the chicken, rice noodles, loaded veggies and teriyaki sauce. I’ve been trying to recreate that exact dish ever since and finally have it nailed down. I hope you love it as much as I do!

Ingredients

Stir Fry

  • skinless boneless chicken thighs or breasts
  • sesame oil
  • rice sticks 
  • onion 
  • celery
  • carrots 
  • red pepper
  • fresh ginger
  • garlic
  • broccoli
  • beans sprouts
  • baby bok choy

Teriyaki Sauce

  • water
  • soy sauce
  • honey
  • brown sugar
  • apple cider vinegar
  • cornstarch

How do you make easy teriyaki noodles?

This dish comes together so quickly and deliciously, you’ll wonder where it’s been all your life. If you have time to spare, you can prep all your veggies and make the sauce ahead of time, otherwise this dish can be made in 25 minutes without the distraction of children pulling on your shirt or asking for a snack.

Heat a skillet on medium high with a dash of sesame oil and bring a medium pot of water to a boil. If using chicken breasts, slice each in half horizontally to create thin cutlets. Once the oil is hot, sear the sliced chicken breasts or boneless skinless chicken thighs until both sides are beautifully browned. Transfer to a plate.

Once the water comes to a boil, cook the rice noodles per package instructions, about 5 minutes. Once cooked, drain and rinse with cold water, then toss with 1/2 tsp sesame oil and set aside.

While the chicken is searing slice up an onion, a few stalks of celery, a couple of carrots and a red pepper. After the chicken has been removed from the pan, add a touch more sesame oil and fry the onion, celery, carrots and pepper.

While the onion and pepper are cooking, mince the garlic and ginger, slice the chicken breast and prep the rest of the vegetables. I like the bok choy left whole-leafed unless the leaves are really big, then slice them in half lengthwise. Broccoli can be chopped and left in big, mouth-sized pieces and the beans sprouts can be left whole. Mix the sauce ingredients together.

Once the onion, pepper, carrots and celery have become soft, add the sauce and bring to a boil for a minute or two. Stir in the chicken, bok choy, bean sprouts and broccoli. Cover the pan with a lid and cook for a couple of minutes, until the broccoli is vibrant in colour. Stir in the rice noodles and serve hot!

Ingredients

Stir Fry

  • 1 lb skinless boneless chicken thighs or breasts
  • 2 ½ tsp sesame oil
  • ½ package rice sticks thickest rice noodle
  • 1 small onion chopped
  • 2 stalks celery chopped
  • 2 medium carrots sliced on an angle then chopped
  • 1 red pepper sliced
  • 1 tbsp fresh ginger minced or grated
  • 3 cloves garlic minced or grated
  • 1 small head broccoli
  • 1 cup beans sprouts
  • 3 heads baby bok choy large leaves sliced in half

Teriyaki Sauce

  • ½ cup water
  • ¾ cup soy sauce
  • 3 tbsp honey
  • 3 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp cornstarch
