These Chicken Caesar Salad Lettuce Wraps are my new favourite recipe. Being that it’s summer, and hot, we love to head to the shade at our favourite beach for dinner, so I have to bring beach appropriate meals!
Packing up two little ones for the beach is time consuming enough never mind making a picnic as well, so I start early in the day during my youngest daughters nap. This means the dinner I choose to make needs to be able to last a long time in the fridge without getting soggy. Being that I eat low carb and my husband is gluten-free, this can be a real challenge!
I’m still in awe with how quick these are to make, how long they sat without getting the slightest bit soggy, and how AMAZING they taste! I could eat these every single day. I hope you give them a shot and let me know what you think!
What ingredients are in a Chicken Caesar Salad?
This recipe is very simple with few ingredients. The wrap is either leaf, butter or head lettuce – I prefer leaf lettuce if you can find big enough leaves! The guts are cooked chicken mixed with mayonnaise and creamy caesar dressing then topped with bacon and parmesan cheese! Yum!
How to make Chicken Caesar Salad Lettuce Wraps
In no time you will have some deliciously crisp Chicken Caesar Salad Lettuce Wraps!
Start by frying up some bacon until nice and crispy, then mix diced cooked chicken with mayonnaise and creamy caesar dressing. Grate some fresh parmesan cheese and lay out the lettuce leaves you have chosen.
Divide the chicken mixture between the leaves, about 1/2 cup each. Form the chicken into logs for easy wrapping. Top with one slice of bacon and about 1 tbsp of the grated parmesan cheese, then wrap them up!
Can I make these wraps ahead of time?
You sure can! If you don’t want to eat them right away, wrap them up in wax paper to hold their shape and keep them fresh! I have eaten them up to six hours after making them (kept refrigerated of course) and they were still just as fresh as when I had made them. Kept cold, these Chicken Caesar Salad Lettuce Wraps would be good all day long.
What Creamy Caesar Dressing to use?
There are loads of low carb creamy caesar dressings you can buy. When I’m feeling lazy I will buy it; there are a couple healthy options at my local grocery store.
Other wise I will make my own Creamy Caesar Dressing! It’s simple to make, I usually have all the ingredients on hand and I love to know exactly what goes in it! Score!
Another reason I like to make my own is then I have enough leftover dressing to make a fresh salad to accompany the Chicken Caesar Salad Lettuce Wraps, or to use up in the next few days with another meal. I love to use this dressing as dip for Fathead Pizza Crust!
What type of cooked chicken to use?
Any cooked chicken will work! I like to make a roasted chicken for dinner the night before so that I have some cooked chicken all ready to go, but you can totally just cook up some breast or thighs for this recipe. Want an even easier option? Grab one of those deli chickens that are already cooked and ready to go.
My favourite chicken for this dish is leftovers from a whole chicken cooked with my favourite Perfect Turkey Rub. It’s lemony, herby and delicious!
Does is have to be freshly grated parmesan cheese?
I highly recommend using freshly grated parmesan cheese from a block of Parmigiano Reggiano or Grana Padano. You really can’t beat the flavour of these two freshly grated, which really stands out in these Chicken Caesar Salad Lettuce Wraps – trust me, you’ll see!

Chicken Caesar Salad Lettuce Wraps
Ingredients
- 5 slices bacon
- 5 lettuce leaves leaf, butter or head lettuce work best
- 2.5-3 cups cooked chicken
- 2 tbsp mayonnaise
- 1/4 cup low carb creamy caesar dressing
- 5 tbsp freshly grated parmesan
Instructions
Equipment Needed
- Medium Bowl
Directions
- Heat a skillet on medium heat and once hot, add the bacon and cook until crispy. Remove the bacon and allow to cool.
- Mix the mayonnaise and caesar dressing in a bowl then stir in the chicken until it is completely coated.
- Set up the lettuce leaves, divide the chicken between each leaf (should be about 1/2 cup per wrap), top with a slice of bacon and 1 tbsp grated parmesan.
- Gently wrap up the leaves to form the wraps! If you won't be eating them right away, wrap them in wax paper to keep the wraps in tact and fresh.
